I have now told this story on 5 different posts BUT, I went a little baking crazy this week…
I decided I wanted Oatmeal Raisin Cookies and Strawberry Cool Whip Cookies BUT I didn’t want to have to go to the store so I started rummaging through my pantry and I found the ingredients that morphed into these and then I kept thinking of a different way to make them and that lead to another recipe and so on until I looked up, it was 3 hours later, and I had baked 10 dozen cookies! It was crazy! I’m sure I sound like a complete crazy person but when your teething baby actually wants to nap for 3 hours, you run wild with freedom! And for me, this week, that ended up meaning I baked 10 dozen cookies! Whatever. All it really means is that all of my friends and my husband’s coworkers are going to have some sweet treats this week…
But who doesn’t love cookies?
- 1/2c Butter, Softened
- 1 Egg
- 1/2t Vanilla
- 1/2c Sugar
- 1/2c Brown Sugar
- 1/2t Baking Soda
- 1/2t Cinnamon
- 1/4t Salt
- 1c Flour
- 1 1/2c Rolled Oats
- 3/4c Dried Cranberries
- 1c White Chocolate Chips
- Greased Cookie Sheet
- Preheat oven to 350 degrees.
- In a large bowl, mix all dry ingredients (baking soda, cinnamon, salt, and flour)
- Mix in sugar and brown sugar then add butter, egg, and vanilla.
- Fold in oats, cranberries, and white chocolate chips.
- Scoop dough, roll into balls, and place about 2 inches apart on greased cookie sheet.
- Bake for 10 minutes or until edges are light golden.
