Peanut Butter Blossoms
Peanut Butter Blossoms are an annual must have in my family. My Poppy used to make them all the time which turned into my mom making them, and now I’ve started making them. Everyone loves them.
I mean, who doesn’t love peanut butter and chocolate??
Not only are they delicious, they’re easy to make. I seem to gravitate to recipes that are hard to mess up… Not because I’m a terrible cook or anything. It’s usually because I’m constantly multitasking, especially now that I have a baby. Everything I do, I’m doing while also doing 3 other things at any given time. So you can see why I need things that are hard to mess up, right? If the timer is going off and the baby is screaming, I need cookies that don’t go from golden to charred in 4 seconds… which is why these are perfect! You can even cheat and make them out of pre-made dough!
I have been crazy about baking this week.
I decided I wanted these Strawberry Cool Whip Cookies and then I kept thinking of a different way to make them and that lead to another recipe and so on until I looked up, it was 3 hours later, and I had baked 10 dozen cookies! It was crazy! I’m sure I sound like a complete crazy person but when your teething baby actually wants to nap for 3 hours, you run wild with freedom! And for me, this week, that ended up meaning I baked 10 dozen cookies! Whatever. All it really means is that all of my friends and my husband’s coworkers are going to have some sweet treats this week…
But who doesn’t love cookies?
- 1/2c Butter, Softened
- 1 Egg
- 1/2c Creamy Peanut Butter
- 1t Vanilla
- 1c Sugar
- 1/2c Brown Sugar
- 1t Baking Soda
- 1/4t Salt
- 1 3/4c Flour
- 24 Hershey's Chocolate Kisses
- Greased Cookie Sheet
- Preheat oven to 350 degrees.
- In a large bowl, mix butter, (1/2c) sugar, brown sugar and peanut butter together.
- Add egg and vanilla.
- Mix in salt, baking soda, and flour until well blended.
- Scoop dough and roll into balls, then roll into remaining (1/2c) of sugar.
- Place about 2 inches apart on greased cookie sheet and bake for 10 minutes or until edges begin to crack and turn golden.
- Place chocolate kisses on top and let cool.
