Cranberry Pecan Chicken Salad
I love chicken salad. I am always trying new variations of it because I could literally eat it daily. This recipe however, doesn’t even need any extra help. It’s the BEST! You can’t beat this Cranberry Pecan Chicken Salad!
I’m a fan of the traditional chicken salad, like most.
But I LOVE this one. I totally made it after Thanksgiving with left over turkey and it was PERFECT! So even though I said it doesn’t need tweaking, I proved myself wrong and you could too.
I’ve seen it with celery for extra crunch, and even a little salt and pepper but if you’re looking for a little bit of a sweeter version, this is the one for you.
- 1 can (10 oz) white chunk chicken breast, broken into pieces
- 2T mayonnaise
- 1T honey
- 2T dried cranberries
- 2T chopped pecans
- 2 stalks of celery, diced (optional)
- 4 soft dinner rolls or croissants (optional)
- 1. In a medium bowl, mix chicken, mayo, and honey together. Add salt to taste if necessary.
- 2. Fold in cranberries and pecans.
- 3. Serve on rolls or on it's own!
- Try it with grilled/baked chicken or turkey!
