Cranberry Brie Bites
My family and I seem to be creatures of habit. We find recipes we really like and we make them every year for the same occasions until we come across something we think we’ll like even better, try it, and then that becomes the new normal, and so on… Every year the Thanksgiving favorites around my mom’s house are Momma’s Sweet Potato Casserole, these Cranberry Brie Bites, and this year’s new normal, Drunken Pumpkin Martini.

It doesn’t matter whether you’re having a house full of guests or just a small family dinner, you make Thanksgiving dinner a special occasion. There’s appetizers, dinner, dessert, and somehow even though we all hate hand washing the dishes afterwards, Nanny’s fine china gets involved.

Everyone is in charge of preparing their own dish to bring. Mom makes the turkey, stuffing, and sweet potato casserole. Auntie brings the apple pie and green bean casserole and Mark brings Peanut Butter Pie. (We like pie, okay? Who doesn’t?!)
Once I started going to college and trying my best at adulting and what not, it was my turn to be in charge of something for Thanksgiving.

And no, the tiny turkey shaped butter sculptures that I bring didn’t count…trust me, I tried.
This is how I came across Cranberry Baked Brie Bites.
Everyone loves cranberry around the holidays and these were super easy to make – so I ran with it and they were an instant hit!
- 12 frozen mini phyllo cups
- 1/4c whole cranberry sauce
- Brie cut into 12 small pieces
- Handful of chopped pecans
- Mini muffin tin
- Preheat oven to 350 degrees
- Place phyllo cups into muffin tin and place brie into phyllo cups
- Bake for 5-10 minutes (cups should be golden and cheese should be melted)
- Top with cranberry sauce and chopped pecans
- Try with a pinch of cinnamon!
