These are the absolute easiest lemon tarts I have ever made and they turned out…
Blueberry Jam Tarts
Spring has sprung and with that I’m baking colorful, fruity desserts! These blueberry jam tarts are a sweet blueberry dessert that’s perfect to bring to just about any occasion.
Have you seen my Easy Lemon Tarts?
This recipe is the same as my Easy Lemon Tarts using a blueberry jam filling rather than a lemon curd filling. You can get creative with it and try all sorts of fillings! You can make your own jam but I went for some pre-made Blueberry Cobbler jam we used for our wedding favors.
Starting with a mini muffin tin and (yes, I cheat and use pre-made cookie dough. It makes the cook time so much quicker) a package of pre-made mini sugar cookie dough, place a single cookie round in every muffin cup.
Bake at 400 for about 10 minutes or until the cookies are golden. Then press them into cups. (I use a tablespoon when all else fails) Let the cookies cool, fill with jam, and refrigerate for about 20 minutes. When chilled, sprinkle powdered sugar over the tops and serve.
- 1 1/2c Blueberry Jam
- 1 package pre-cut mini sugar cookies
- powdered sugar (sprinkled on top)
- mini muffin tray
- Preheat oven to 400 degrees
- Place pre-cut cookies into mini muffin tin and bake for 10 - 15 minutes or until golden
- Press center of cookies down creating mini cookie cups
- Fill with Blueberry Jam and let cool
- Sprinkle powdered sugar on top and serve!
- Try with a variety of jams!
